Home Made Gnocchi
These soft, airy, delectable potato based pasta pillows are a very quick and easy meal to make. Ideally using freshly baked potatoes, you can also use up any leftover baked potatoes that you have sitting around in the fridge from a previous meal. Toss them in a sauce of your choosing, and enjoy!
Ingredients
- 2 large Baked Russet Potatoes
 - 2 cups All Purpose Flour
 - 1 large Egg
 - ¼ cup Preferred Sauce see below for ingredients to make fresh
 - Salt and Pepper to taste
 
Pesto Dressing
- ⅓ cup Pine Nuts
 - 3 cloves Garlic
 - 2 cups Fresh Basil
 - 1 cup Parmesan Cheese fresh grated
 - 1 cup Olive Oil extra virgin
 - Salt and Pepper to taste
 
Marinara Sauce
- 28 oz Crushed Tomatoes
 - 1 medium Yellow Onion finely diced
 - 3 cloves Garlic finely minced
 - 1 tablespoon Tomato Paste
 - ¼ teaspoon Dried Oregano
 - ¼ cup Fresh Basil Leaves
 - Salt and Pepper to taste
 
Béchamel Sauce / Mornay Sauce
- 1½ tablespoons Unsalted Butter
 - 1½ tablespoons All Purpose Flour
 - 1 cup Whole Milk kept warm
 - ½ cup Gruyere Cheese grated
 - ¼ cup Parmesan Cheese grated
 
Optional Toppings
- Fresh Grated Parmesan Cheese
 - Crispy Bacon Bits
 - Thinly Sliced Fresh Basil Leaves
 - Blanched Vegetables like peas or French beans
