These soft, airy, delectable potato based pasta pillows are a very quick and easy meal to make. Ideally using freshly baked potatoes, you can also use up any leftover baked potatoes that you have sitting around in the fridge from a previous meal. Toss them in a sauce of your choosing, and enjoy!
